I generally depend on plug-in over the ear headphones for my phone conversations. For some reason, every time I talk on the phone, every piece of equipment in the hotel starts making noises and I can't pick out human conversation from the noises. I use them with multiple devices ... phones, tablets, laptops.
Why not Bluetooth? Because it is not reliable for that purpose. I've had too many "my headset's not working, so we'll need to try this call later" moments. Also because it only grabs one device at a time, and if it has multi-device capability, it always grabs the wrong one.
Why not USB C? 1 ... not everyone wants to re-buy all their equipment so their headphones can work again; 2 ... I've already seen damaged USB C ports where someone tried to jam a recalcitrant connector into a device. While it is an improvement over microUSB (USB micro B), it is still worse than mini audio jack for this use case.
